White Chocolate Gingerbread Pancakes Recipe

Ingredients

1 cup cake flour
1 cup all purpose flour
1/2 cup buttermilk powder (or plain dry milk)
1/3 cup + 1 Tablespoon sugar
1 Tablespoon baking powder
2 teaspoons ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon ground cloves
3/4 cup white chocolate chips
1 3/4 cups of water
6 tablespoons of soft butter
2 large eggs

Method

In one bowl, mix all dry ingredients together.

When this is well mixed, add the dry ingredients alternatively with the rest of the water. Stir just to moisten. Pancake batter should be somewhat lumpy when you add it to the pan for cooking.

Note: There are two methods of adding the white chocolate chips. You could either stir the chips in now, OR add them manually to the top of each pancake while the cakes are cooking.

Spray cooking oil or spray to your frying pan or griddle. Heat your frying pan or griddle to a medium high temperature.

Pour or spoon the pancake batter on the heated griddle in amounts of approximately 1/4 cup per serving.

If you have not already added the white chocolate, place chips on the top of the pancakes, pressing them down slightly. Turn the pancakes when the mixture is bubbling on top. This should take two to three minutes.

Continue cooking until the bottom is golden brown.

Serve your white chocolate gingerbread pancakes in the usual way -- with butter, pancake syrup or whatever syrup you prefer.
