Swirled Chocolate Cheesecake Recipe

Chocolate Crust

1 1/4 cups chocolate crumbs made from 30 chocolate wafers. Its easy using a good blender, such as the Oster BPST02-B Professional Series Blender, Black

1/3 cup melted butter

Cheesecake Ingredients

1 1/2 cups chocolate chips
1/2 cup sugar
2 8-ounce packages cream cheese at room temperature
3/4 cup sugar
1 tsp vanilla
4 eggs

Method for making this Swirled Chocolate Cheesecake Recipe

Mix the chocolate cookie crumbs with the melted butter. Evenly line the bottom and part way up the sides of a 9 inch springform pan, like the Kaiser Bakeware La Forme 9-Inch Nonstick Springform Pan. You could also use an angel cake pan with a removable center. Bake the crust for five minutes at 325° F. Cool.

In the top of a double boiler like the Fagor Stainless-Steel 2-Quart Double Boiler with Steamer Insert., stir the chocolate chips and 1/2 cup of sugar. Melt over boiling water, covered, but stirring a couple of times during the melting period.

Remove from heat, but keep mixture in the double boiler. Place the cream cheese, 3/4 cup of sugar, vanilla and eggs in a beater bowl. Beat until smooth, scraping down sides a few times.

Add half of this cheese mixture to the melted chocolate. Pour most of the chocolate batter into the crumbed pan. Pour the remaining white batter over the top. Drizzle the remaining chocolate mixture on top of the white mixture. Using a knife tip, swirl lightly through the white cheese layer.

Bake for 50 minutes at 325 °F. The cheesecake will puff slightly then fall during cooling period. Chill thoroughly and carefully transfer to serving dish.
