This chocolate sacher torte recipe is great for Valentine's Day or any other time you want a special treat.

Trivia: A torte is a cake made with many eggs. It usually has little or no flour but has ground nuts or bread crumbs in lieu of. A sacher torte is a well known Viennese cake containing chocolate, an apricot filling and dark chocolate icing.

Chocolate Sacher Torte Recipe

Batter Ingredients

5 egg yolks and whites, separated
1/3 cup butter
6 tbsp sugar, divided
3 oz semi-sweet chocolate, melted
1/2 cup cake and pastry flour, sifted

Frosting Ingredients

1 square semi-sweet chocolate, melted
1/4 cup refrigerated butter
1 egg yolk (left over from batter)
1/4 cup sugar
1 tsp instant coffee powder (optional)

Filling Ingredients

1/3 cup apricot jam

Method for making Chocolate Sacher Torte Recipe


Separate the egg whites from the yolks. Place the egg whites in a large mixing bowl, using a good mixer like the KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White.

Put four egg yolks in another large mixing bowl, and keep one egg yolk separate to use in the frosting. Beat the egg whites with 3 tablespoons of sugar until the whites are very stiff. Don't bother washing the beaters and beat the four egg yolks with 1/3 cup butter and 3 tablespoons of sugar until the mixture is very light. Melt the chocolate in the microwave or in a double boiler like the Fagor Stainless-Steel 2-Quart Double Boiler with Steamer Insert. Allow the chocolate to cool slightly then beat it into the egg yolk mixture.

Fold in the stiffly beaten egg whites and flour using a wire whip until just barely blended.

Turn batter into two greased or non-stick layer cake pans lined on bottom with buttered wax paper. Bake in center of oven at 325°r; for 35 minutes or a little more. Remove from oven, let stand for a couple of minutes then turn out and cool on cake racks. Remove the wax paper. When cool, spread the apricot filling between the layers and place one layer on top of the other.


Make frosting by melted remaining chocolate square, then stirring the 1/4 cup of cold butter into it. Add the last egg yolk, icing sugar and coffee powder. Beat well. Spread on top and sides of your chocolate sacher torte recipe.
