Gluten Free Cake Recipes with Chocolate #1:
Ingredients
Cake
3/4 cup of sorghum flour
2/3 cup of whole bean flour
1/3 cup of potato starch
2/3 cup brown sugar
1 1/2 teaspoon of xanthan gum, such as Bob's Red Mill Xanthan Gum, 8-Ounce Packages (Pack of 6)
2 teaspoons Gluten-Free Baking powder, such as Bob's Red Mill Baking Powder, 16-Ounce Packages (Pack of 4)
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 cup cocoa powder, unsweetened
1 tablespoon ground ginger
3/4 teaspoon cinnamon
1 cup apple juice, no sugar added
3 tablespoons of vegetable oil
Topping
1/2 cup of crystallized ginger, chopped
1 cup of pecans or other nuts, cut into pieces
1/4 cup brown sugar
1/4 teaspoon of cinnamon, ground
Method
Grease a nine inch springform pan.
Mix all cake dry ingredients in one bowl.
In a second bowl, beat together the oil and apple juice.
Add the dry mixture to the wet mixture and stir. Do not overbeat. Just combine the two until no more dry flour is visible.
Place your batter in the pan, spreading it so it reaches the edges. Allow it to stand for 30 minutes.
Preheat the oven to 350°F or 180°C. If you are using a dark colored pan, heat the oven to 325°F or the equivalent reduction in Centigrade.
To get the topping ready, use a small bowl and combine all topping ingredients. Sprinkle this lightly over top of the cake batter.
Cook this cake until done. This usually takes thirty-five or forty minutes. Test by inserting a cake tester or toothpick in the middle. The tester should come out dry. Remove this, the first of your gluten-free cake recipes from the oven and place in pan on a wire rack. Cool completely.
