Best Recipe Easter Cake With Chocolate

What can be cheerier than a recipe Easter cake? One made with chocolate, of course! You'll find two yummy Easter cake recipes on this page.

Trivia: In the early days of Christianity, Europeans believed that if you kept an egg laid on Good Friday for 100 years, the yolk would turn to diamond. Cooking a Good Friday egg would ensure fertility and prevent sudden death. Thus, the tradition of the Easter egg was born.

And now, on to the recipe Easter cake that you'll love to bake and serve. This cake is shaped like an adorable bunny.

First Recipe Easter Cake with Chocolate

2/3 cup butter at room temperature
1 ½ cup sugar
3 eggs
3 squares melted, unsweetened chocolate. For best results, use a quality chocolate.
2 cups sifted cake and pastry flour
2 ¾tsp baking powder
¼ tsp salt
¾ cup milk
1 tsp vanilla.

Cream together butter and sugar. Add eggs and mix beat well. Stir in melted, slightly cooled chocolate. In separate bowl, sift the flour, baking powder and salt together.

Add the dry ingredients to the creamed mixture alternately with the milk. Combine well. Stir in vanilla.

Butter and line 2 8" or 9" round pans with wax paper. Pour recipe Easter cake into pans and bake at preheated 350 F oven for 30 or 35 minutes. Cool on cake racks then remove from pans.

Icing
¼ cup butter or margarine
5 tbsp lemon juice
3 ½cup stirred icing sugar

To make icing for your recipe Easter cake, beat all ingredients together until smooth.

Decoration
coconut
red food coloring
pink ribbon
red Smarties for tip of tongue
two raisins for eyes
strip of licorice or shredded raisins for lips

Shape bunny by cutting a 1 ½" wide ring from outside edge of one layer. Cut this ring into eight even pieces to form the paws.

Cut edges off other layer, leaving a 6 ½ inch square. When straight sides are placed together, these edges form two ears.

Place small round from which ring was cut at center of large tray. Place ears at top, slanting out. Place square under head for body. To form paws, stack 2 ring pieces on top of each other and place two stacks touching at each side of body.

Frost all over with icing.

Sprinkle recipe Easter cake with coconut.

Tint a little coconut with red food coloring to make it pink and sprinkle inside ears and at nose and on bottom of paws. Tie a pink ribbon in a bow and place it under bunny's chin. Make a tip of tongue with a red Smarties, eyes with raisins, and smiling lips with tiny strip of licorice or with shreds of raisins.

Recipe Easter Cake #2: Chocolate Bar Easter Cake

8 oz milk chocolate bar; chunk
1/4 cup butter
1 2/3 cup boiling water
2 1/3 cup unsifted all-purpose flour
2 cups light brown sugar; pack
2 tsp baking soda
1 tsp salt
2 eggs
1/2 cup sour cream
1 tsp vanilla.

Preheat oven to 350 F. Combine chocolate, butter and water, stirring until the chocolate is melted.
