Chocolate Pots de Creme Recipe

This recipe for chocolate pots de creme is high in fat, high in calories and certainly will not fit on anyone's diet. On the other hand, its so rich and creamy and good that you might want to try it for a special occasion.

Trivia: According to Wikipedia, a Pot de Creme is a French dessert custard that is baked, chilled, and served in ramekins. Its name means "pot of cream".

Tip #2: This recipe requires a good quality chocolate that is at least 70%

Tip #3: Rasped lime zest is lime zest that is finely grated.

Chocolate Pot de Creme Recipe


2 cups whipping cream
6 egg yolks
2 tablespoons granulated sugar
2 teaspoons rasped lime zest
pinch of salt
3.6 ounces or 100 grams of 70% dark chocolate
6 fresh raspberries or other berries for garnish
6 sprigs of mint for garnish


Place the whipping cream in a saucepan over low heat. Warm the whipping cream.

Melt the milk chocolate.

Using a separate bowl, mix together the egg yolks, sugar, lime zest and salt. Whisk this mixture thoroughly. Working slowly, pour the warmed cream over the yolk mixture. Continue whisking until this is well combined.

Move this mixture to a heat proof bowl and place it over a sauce pan of hot water. Note that the water should be hot but not boiling.

Cook, whisking constantly, for about ten minutes. The mixture is cooked when it coats the back of a spoon and is no longer liquid. Remove this from the heat and strain it.

Add the melted chocolate. Stir until everything is smooth.

Pour your mixture into six ramekins.

Refrigerate the chocolate pots de creme for a minimum of three hours, or until set. Garnish with berries and mint when serving.
