Chocolate Nanaimo Bar Cheesecake Recipe
2 1/2 cups Oreo cookies, rolled into crumbs
1/2 cup butter
1/4 cup pecans, chopped
1/2 cup coconut, flaked
4 packages of softened cream cheese (8 oz per package)
1 cup sugar
1/4 cup custard powder (Bird's brand is preferred in my country)
6 ounces semi-sweet chocolate
1/2 cup cream (heavy cream)
Tip:You can make Oreo cookie crumbs by buzzing the cookies in your food processor or by placing the cookies between two sheets of waxed paper and crushing them with your rolling pin.
Preheat the oven to 350°F.
To make the base, melt the butter. Mix the melted butter with the Oreo cookie crumbs, pecans and coconut. Place this in a 13 inch by 9 inch baking dish. Press down firmly. Refrigerate.
Using your electric mixer, beat together the cream cheese, sugar and custard powder. When this is fluffy, beat in the eggs one at a time. Be sure to fully mix in each egg before you add another.
Spoon this filling over the chilled crust.
Place in oven and bake until the center is almost, but not quite set. This takes about forty minutes.
Remove from oven and cool on a rack until your cheesecake reaches room temperature. At that point, refrigerate until it is thoroughly chilled. This takes three hours or more.
Melt together the chocolate and the heavy cream. Melt this over very low heat or use a double boiler. Stir until blended.
When your chocolate mixture is thoroughly blended, pour it over the top of your cheesecake and spread it around.
Refrigerate your yummy Chocolate Nanaimo Bar Cheesecake until it is firm then serve to your lucky guests.
