Italian Chocolate Cake Recipe

Italian Chocolate Cake Recipe

Cake and Frosting Ingredients

3 cups all purpose flour
1-1/4 cups unsweetened cocoa
2 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1/2 tsp. salt
3 cups sugar
1 1/4 cups vegetable oil
2 tsp. vanilla
1 cup Whole Milk Ricotta
3 large eggs
2 1/2 cups water

Chocolate frosting:
12 ounces quality milk chocolate
1 cup sour cream at room temperature


Set oven to heat to 350°. Grease two nine inch round cake pans.

Sift the flour, cocoa, baking powder, baking soda and salt together Using your mixer, beat the sugar, oil, ricotta and vanilla for about three minutes. Use medium speed. Add the eggs and beat well. Turn the speed back to low and add the flour alternatively with the milk, using three additions. Turn to medium speed and continue beating for one minute. Place the batter in your cake pans and bake for 35 or 45 minutes. Cake should test done. Remove from oven and cool for ten minutes in the pans before turning onto a cake rack to cool completely.

Using a double boiler, melt the chocolate over simmering water. Stir, and cool. Mix the sour cream into the chocolate. Frost the top of one layer. Place the second layer on top of that, then frost the sides and top of this Italian chocolate cake. Garnish the top with chocolate shavings (optional).

This Italian chocolate cake is great served with raspberries and whipped cream.
