Chocolate Espresso Nanaimo Bars Recipe

Chocolate Espresso Nanaimo Bars Recipe

Ingredients

Bottom:

1 3/4 graham wafer crumbs
1/2 cup unsweetened, medium coconut
1/2 cup hazelnuts, toasted and chopped
1/2 cup butter
1/4 cup sugar
1/3 cup unsweetened cocoa powder
1 egg

Filling

1 tsp Instant Expresso Coffee Powder
1 tbsp hot water
1 tbsp hazelnut syrup
2 cups icing sugar
2 tbsp cornstarch
pinch salt
1/4 cup butter
2 tbsp milk
1/4 tsp vanilla extract

Topping

5 ounces semi-sweet chocolate, chopped
1 tbsp butter

Method

Tip:You can make graham wafer crumbs by buzzing the wafers in your food processor or by placing the wafers between two sheets of waxed paper and crushing them with your rolling pin.

To make the base, mix together the graham wafer crumbs, coconut and hazelnut. Using a saucepan, combine the butter, granulated sugar, cocoa powder and egg. Stir constantly and cook over low heat until the mixture thickens slightly. This may take about six minutes or a little longer. Take off stove and stir in the crumb mixture. Press this into a 9 inch baking pan that you have greased, and chill for about an hour.

To make the filling, dissolve the coffee powder in hot water, using a small bowl. Add the syrup and cool. Using a large bowl, mix together the icing sugar, cornstarch and salt. Add the coffee, butter, milk and vanilla. Blend well. Spread this over the chilled base, then cover tightly and chill for approximately two hours. It should be firm.

To make the topping, place the chocolate and butter in the top part of a double boiler over hot water. Do not allow water to simmer. When chocolate is about 3/4 melted, remove from saucepan and continue stirring until completely melted. Spread this over the chocolate expresso nanaimo bars and place in the refrigerator until it is firm.
