For best results with your chocolate truffles, you will want to use an excellent quality chocolate. Since chocolate is the main ingredient, the final result depends upon the type of chocolate that you use. Chocolatiers like Valrhona, Schokinag and Callebaut are known world-wide for their couvertures and mixing chocolates. (The high quality chocolate used for melting is referred to as couverture.

Tip:Many chefs state a preference for Valrhona and Callebaut.

The First Chocolate Truffles Recipe

Dark Chocolate Truffles

You will need one ganache recipe, refrigerated until firm but not hard. Refer to the ganache recipe on this site. Use any variation of ganache that you prefer.

Spread parchment paper on a baking sheet. Portion ganache mixture using tablespoons to measure, and place on baking sheet. Refrigerate again for 15 minutes.

Remove from fridge, then gently roll your truffles into balls using your hands or a melon baller.

Roll the rounds in a good quality cocoa powder. Roll in confectioners sugar if desired. Refrigerate in tightly sealed container until one hour before serving.

Suggestion: Consider using a truffle candy mold. The Large Swirl Chocolate Truffle Mold is an example.

Variation #1: Add a spirit such as rum or cognac or a liqueur (such as Grand Marnier, coffee liqueur, schnapps, etc) to the ganache during preparation.
Variation #2: After coating with cocoa, roll in some other delectable crumb mixture. Suggestions: finely shredded coconut, crushed mints, chopped nuts, candied cherries or other fruit, cookie crumbs, etc.

The Second Chocolate Truffles Recipe

Baileys Irish Cream Truffles

12 ounces semi-sweet choc morsels
1/4 cup whipping cream
1 tbsp butter
2 egg yolks
1/4 cup Baileys Irish Cream

Melt chocolate, Baileys and heavy cream together over very low heat. Whisk in yolks, one at a time; mixture will thicken. Whisk in butter. Refrigerate overnight, or until firm. With spoon make small balls. Roll in powdered sugar, cocoa, chopped nuts, sprinkles, etc.

Chocolate Pumpkin Truffles

Every fall, crowds of eager chocolate lovers visit a local chocolatier to purchase the exquisite pumpkin truffles made from locally grown sweet pumpkins. They’re wonderful for Thanksgiving and Hallowe’en treats.

1 recipe ganache
˝ cup pumpkin puree (cooked)
1/3 cup Coffee liqueur
1 tsp cinnamon

Add pumpkin, liqueur and cinnamon to the ganache during preparation. Prepare as above. Roll truffles in cocoa. Toasted, finely ground almonds can be used for rolling as well.
