Orange Chocolate Olive Oil Cake Recipe

Ingredients

1/2 cup of Extra Virgin Olive Oil, plus a little extra for oiling the pan
2 oranges
1 cup flour, unbleached
pinch of sea salt
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
3 eggs
1 cup sugar
1/2 cup plain yogurt, full fat
1/4 teaspoon vanilla extract
1 tablespoon of cocoa powder

Method

Lightly grease a 9 inch springform pan.

Preheat the oven to 325°F.

Grate the skin of the two oranges. Squeeze the oranges until you have 1/2 cup of juice.

Stir all dry ingredients together in a mixing bowl.

In a separate bowl, and if possible, use a good electric mixer. Beat together the eggs, sugar and half of the grated orange peel at high speed. Beat until you have a thick, yellow cake batter.

Lower your speed and include the yogurt, vanilla, olive oil, orange juice and the rest of the grated orange peel. Beat this until it is well mixed. Set aside 1/2 cup of this batter.

Working by hand, carefully fold the dry ingredients into the batter. Pour this batter into your springform pan.

Stir the cocoa powder into the half cup of batter that you set aside.

Pour this chocolate mixture into the cake's center. Using the tines of a fork, drag the fork through the cake so you make a pattern that resembles a sunburst.

Place your orange chocolate olive oil cake on the center rack in your preheated oven and cook until done This usually takes about 40 minutes.
