Chocolate Guinness®Cheesecake Recipe


1 cup of chocolate cookies,crushed. For best results, do not substitute.
1/4 cup butter, room temperature
2 tablespoons white sugar
1/4 teaspoon unsweetened cocoa powder
3 packages of soft cream cheese (totaling 24 ounces)
1 cup white sugar
3 eggs
8 ounces semisweet chocolate chips
2 tablespoons heavy cream (do not substitute)
1 cup sour cream
a pinch of salt
3/4 cup Guinness®
2 teaspoons vanilla extract
1 ounce of semisweet chocolate


Butter a nine inch springform pan.

Preheat the oven to 350°F.

To make the crust, locate a bowl and mix together the first four ingredients. Pat this down into the bottom of your buttered pan.

To make the filling, you will do well do use an electric mixer.

Put the cream cheese in your mixer bowl. Using the lower speed, beat while adding the sugar slowly. At that point, add the eggs, one by one. Beat this mixture until it is smooth.

Use your microwave to melt the chocolate chips in the heavy cream. To do this, combine the two in a small bowland microwave in time bursts of thirty seconds. After each thirty second period, stir. Continue until the chocolate is completely melded.

Beat this melted chocolate into the cream cheese mixture. Next, stir in the sour cream, salt, Guinness® and the vanilla. Beat this until it is smooth.

Place this mixture over the crust in the springform pan.

You now prepare the pan for a submerged waterbath. Wrap the outside of the springform pan with foil wrap. Be sure to wrap it well, or water could seep in. Place the springform pan in a larger baking dish, and add enough water in this baking dish to cover the bottom half of the pan.

Place the whole thing in the oven and bake for three quarters of an hour. At this point, shut off the oven heat and open the oven door slightly. Leave the Chocolate Guinness® cheesecake in the oven for an additional three quarters of an hour.

Remove the cheesecake from the oven. Run a knife around the inner edges to loosen the dessert from the pan. Refrigerate for four hours or more.

You now make the topping for your cheesecake dessert. Melt the semi sweet chocolate in the microwave.

You will be making shamrock shapes out of this chocolate. To do this, spread a sheet of waxed paper over a flat surface. Drop three small "blobs" of melted chocolate on the paper, close enough together to form a clover shape. Take a toothpick and drag a little chocolate outward to create a stem for the shamrock. Continue making shamrocks until the chocolate is used up.

Put your chocolate shamrocks in the refrigerator and allow to harden. When they are hard, place them on top of the Chocolate Guinness® cheesecake.

This makes an unusual and delicious dessert for St. Patrick's Day -- or for any other day when you want something special.
