Chocolate Diamond Bars with Rich Frosting

Chocolate Diamond Bars Recipe with Rich Frosting


2 squares unsweetened chocolate
2 eggs
1 cup sugar
1/4 teaspoon baking powder
3/4 cup flour
1/2 teaspoon salt
1 cup chopped walnuts
1/2 cup butter or margarine, melted
1 teaspoon vanilla


Preheat oven to 350°. Beat the eggs and sugar together in a bowl. Sift the dry ingredients together until well mixed. Melt the chocolate in a good double boiler, like the Farberware Classic Series 2-Quart Saucepan with Double Boiler Insert and Lid Take if off the heat when melted, then blend the melted chocolate with the egg mixture. Add the dry ingredients and combine. Add the walnuts, melted butter and vanilla. Mix well. Spread in a pan that is 8" by 16", or use two pans that are eight inches square. Bake for approximately twenty minutes. Cool and frost.

Chocolate Frosting

2 squares unsweetened chocolate
1 cup icing sugar
1 egg, beaten
2 tablespoons butter
1 teaspoon vanilla

Melt the chocolate in the top of a double boiler. Add the icing sugar, egg , butter and vanilla. Remove from heat immediately. Cool slightly before spreading on your chocolate diamond bars.
