Recipe for Chocolate Cranberry Granola

Chocolate Cranberry Granola Recipe
The recipe makes sixteen servings.
3 cups old fashioned rolled oats
1 cup crispy wheat cereal squares
1/2 cup brown sugar
1/3 cup pecans, chopped
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 cup plus 2 tablespoons of honey
3 tablespoons good quality vegetable oil
2 teaspoons vanilla
3 ounces semi-sweet chocolate
1/2 cup dried cranberries
Place parchment paper over the bottom of a large cookie sheet or baking sheet. Spray it with cooking spray.
Preheat your oven to 300%deg;F.
Chop the chocolate so it is finely chopped.
Using a large bowl, combine the oats, cereal squares, sugar, pecans, salt and cinnamon.
Using a small saucepan, mix together the honey and the oil. Warm this over low heat for about two minutes.
Add the vanilla and chocolate to the warm honey mixture. Whisk this until no lumps remain.
Stir the chocolate into the oats in the bowl. Stir in the dried cranberries.
Place this in your papered, sprayed pan.
Put the mixture in the oven and bake it for about 28 minutes. Stir it twice during this baking time.
Remove from oven and cool on a wire rack. When it is completely cool you can store it for up to a week. Be sure your container is air tight.
