Web's Best Chocolate Coated Ginger Recipe
Chocolate coated ginger is great for Christmas -- or at any other time of the year. These two recipes are so simple to make -- and so refreshingly good.
Trivia: Ginger has health benefits. Research shows that it helps motion sickness, relieves migraines and arthritis and inhibits blood clots.
And, as always, I suggest you do yourself a big favor and use the best quality chocolate you can find or afford. It really does make a difference.
Recipe #1: Chocolate Dipped Ginger
2 oz. bittersweet or white chocolate
40 pieces of crystallized ginger
Chop the chocolate. Take a baking sheet and line it with waxed paper.
Melt chocolate over hot water, but do not allow the water to boil. This Kinetic Classicor Stainless-Steel 2-Quart, 3-Piece Double Boiler

Pour the melted chocolate into a small bowl, then dip each piece of ginger about half way into the chocolate. Arrange this on the pan and refrigerate until it sets. Then enjoy your chocolate ginger confection!
Recipe #2: Chocolate Ginger Baubles
4 oz. bittersweet chocolate or white chocolate
120 very small cubes of crystallized ginger
Chop the chocolate. Line a baking sheet with waxed paper.
Melt the chocolate over boiling water, as described above. Using a teaspoon, drop small pools of chocolate on the baking sheet, then tip the sheet to let the chocolate spread out slightly. Tap it on the bottom if necessary.
Place three pieces of ginger over each chocolate puddle. You will have chocolate on the bottom and ginger on the top. Refrigerate. This makes about forty pieces of chocolate coated ginger.
