Chocolate and Ginger Confections Recipe

I love the combination of Chocolate and Ginger. This page offers two of my favorite recipes and they are both so easy to make.

Trivia: According to Wikipedia, fresh ginger can be substituted for ground ginger at a ratio of 6 to 1, although the flavors of fresh and dried ginger are somewhat different. coffee

Tip: For best results, always use good quality chocolate. It is widely available.

First Recipe: Crystallized Ginger and Chocolate

2 ounces of chocolate, either bittersweet or white
40 pieces of crystallized ginger

First, chop the chocolate.

Prepare a baking sheet by lining it with waxed paper or parchment paper.

Using a good double boiler (eg the Farberware Classic Series 2-Quart Saucepan with Double Boiler Insert and Lid), melt your chocolate over hot water. Avoid allowing the water to boil.

Pour your melted chocolate into a smaller bowl, and carefully dip each piece of crystallized ginger halfway into the chocolate.

Place the ginger on your pan and place in the refrigerator until it sets. This usually takes about thirty minutes.

Second Recipe: Crystallized Ginger Treats

4 ounces of chocolate, either bittersweet or white
120 cubes of crystallized ginger (tiny cubes are best)

This is made in a very similar fashion to the first recipe. Chop the chocolate. Chop the ginger if necessary. Melt the chocolate in your double boiler. Prepare your pan as before.

Drop teaspoons of melted chocolate onto the pan, one inch apart. Jiggle or tap the pan so the chocolate drops spread out somewhat.

Place three tiny pieces of crystallized ginger on each confection.

Chill for half an hour until set.

Both of these recipes for chocolate and ginger confections are so fast and easy to make. If you're a ginger maven like me, you'll want them often.
