Chocolate Almond Zucchini Bread Recipe

Chocolate Almond Zucchini Bread Recipe


3 Eggs; large
2 cups Sugar
1 cup Salad oil
2 oz Chocolate; unsweetened
1 tsp Vanilla extract
2 cup Zucchini; grated
3 cups Flour; all-purpose
1 tsp Salt
1 tsp Cinnamon; ground
1/4 tsp Baking powder
1 tsp Baking soda
1 cup Almonds; chopped


Tip:Grating zucchinis is easier if you have a good food processor.

Preheat over to 350° and grease 2 9-Inch Loaf Pans or use non-stick loaf pans.

Beat the eggs until lemon colored, then beat in the sugar and oil. Melt chocolate over hot water, using a double boiler. Stir the melted chocolate into the egg mixture, along with the vanilla and zucchini. Sift the dry ingredients together, then stir into the batter. Lastly, add the almonds. and mix well.

Pour into prepared pans and bake for approximately eighty minutes.

Cool the chocolate almond zucchini bread for twenty minutes then remove from pan and cool thoroughly. This loaf is both good and nutritious.
