Recipe for Chocolate Cinnamon Lava Cakes


1 cup of dark chocolate, suitable for baking
1 cup butter
6 eggs at room temperature
1 1/4 cups of sugar
1 cup flour
1 teaspoon of cinnamon


You will need 8 ramekins. Begin by buttering your ramekins with a little additional butter that you have melted.

Preheat the oven to 350°F.

Chop up the baking chocolate, then melt it in a good double boiler.

Add the butter to the melted chocolate and stir.

In a separate bowl, beat the eggs and sugar together. Beat well. Continue beating and add the melted chocolate and butter.

Mix the cinnamon into the flour and add this to the batter. Beat until the mixture is totally blended.

Divide the batter up into the eight ramekins. Place them in the oven and bake until done. This will take approximately 14 minutes or a little more.

You can test with a toothpick for "doneness" -- but remember that the inside is intended to be moist and sticky. Test near the edge instead.

You can remove your chocolate cinnamon lava cakes by turning out onto individual dessert plates, if desired. Alternatively, you can serve them in the ramekins. A glob of sweetened whipped cream makes a lovely topping.
