Amaretto Chocolate Mousse Recipe

Amaretto Chocolate Mousse Recipe

Makes 8 servings at 127 calories each.

Tip: If calorie counting isn't important, use whipping cream rather than milk.

Ingredients

1 envelope unflavored gelatin
1 1/2 cups skim milk
2 separated eggs plus two extra egg whites
1/4 cup of sugar
1/3 cup of Dutch process cocoa (or any good cocoa)
1 tablespoons of Amaretto
1/3 cup of sugar

Method

Using a saucepan, mix together the gelatin and 1/2 cup of the skim milk. Stir and leave it for a minute so the gelatin can soften. Place the saucepan over medium heat and stir for another minute or until the gelatin dissolves.

Combine the rest of the skim milk with the two egg yolks and beat. Add this mixture to the ingredients in the sauce pan. Also add 1/4 cup of sugar and the cocoa then stir.

Stirring constantly, cook this over medium heat until thickened. This takes about eight minutes. Remove from heat and stir in the Amaretto. Refrigerate for about twenty minutes.

Bring the egg whites to room temperature then beat until foamy, using a good electric mixer like the KitchenAid K45SS Classic 250-Watt 4-1/2-Quart Stand Mixer, White . Add the remaining 1/3 cup of sugar one tablespoon at a time. Beat until you have stiff peaks. Slowly add the chilled chocolate mixture to the beaten egg whites. Fold this in gently.

Chill the Amaretto Chocolate Mousse Recipe for two hours or more. Garnish with halved or sliced strawberries.
