Recipe for 3-Chocolate Cookies
It should be no surprise that 3-Chocolate Cookies contain three types of chocolate. They are part brownie, part cookie, and very, very good.
They are similar to the two-bite brownies that you can buy, but they are a healthier version.

Tip #2: This recipe calls for cocoa nibs, which are roasted cocoa beans separated from their husks and broken into small bits. They have no sugar or fat added, so are pure cocoa. You can get them at Amazon: Navitas Naturals Cacao Nibs, 8-Ounce Pouches

3-Chocolate Cookies Recipe
The recipe makes approximately 32 cookies.
3/4 cup brown sugar
6 tablespoons good quality vegetable oil
2 tablespoons of honey
1 omega-3 egg
2 teaspoons of vanilla extract
1/2 cup natural cocoa powder
3/4 cup whole wheat flour
1/4 cup cocoa nibs
1/4 cup chocolate chips, which should have a minium of 60% cocoa mass. Alternatively, you could use chocolate chunks with a minimum of 70% cocoa mass
2 tablespoons wheat germ
1/4 teaspoon of baking soda
Prepare by turning the oven on to 375°:F and letting it preheat. Line a baking sheet with parchment paper.
Combine the sugar, oil, honey, vanilla and egg. Beat for about three minutes.
Put the beater on low speed, and slowly add the cocoa powder. When the powder is blended, beat on high for one minute.
In a separate bowl, combine the remaining dry ingredients.
Add the dry ingredients to the wet mixture and blend. Expect a very sticky batter.
Drop by teaspoonfuls onto the prepared sheet. Space them about an inch apart.
Put the cookie sheet on a rack in the middle of the oven and cook for eight minutes or a bit longer. The cookies are done when they have puffed up a bit and the outside is crunchy. Do not overbake or the chocolate will burn.
Remove from the oven and cool a little before removing them from the baking sheet.
These 3-chocolate cookies are rich in flavinols, thanks to using natural cocoa powder instead of processed cocoa powder.
